Monopole, brought to you by chef Brent Savage and sommelier Nick Hildebrandt, is a bistro by day and wine & cocktail bar by night. Monopole is inspired by the French bistronomy movement and takes cues from the best modern bistros in Paris, London and Copenhagen. Located in Sydney’s CBD, the space is casual, fun and vibrant.

The constantly evolving seasonal menu is brought to life through contemporary cooking techniques. The wine list is tightly focused on France and Australia, featuring undiscovered local producers, classic estates, and some of the edgier cult producers of more modern times. Unfussy and not bound to tradition, there is a plenty to enjoy in this exciting package.
